Instead of my usual Sunday Lunch prep post, I decided to share about some holiday appetizers. I had my girlfriends from work over last week, and we had a great night together enjoying apps and drinks! It’s so nice to hang outside of school and have fun! Here is a round up the the recipes I made for when they come over. Some are my own, and some from other blogs!
To get the night started, we had Cranberry Moscow Mules. I made a big pitcher, so all that needed to be done, was pour it over ice. The ingredients are simple, vodka, ginger beer, lime juice, and cranberry juice. Garnish with whole cranberries and a sprig of rosemary. And be sure to serve in copper mugs!
The staple of any good party is a cheese platter. I chose to include applewood smoked gouda, organic pepperjack, organic muenster, and manchego. Expertly cut and displayed by Kate
The Buffalo Quinoa Bites were also a hit, and as you can see here, someone couldn’t wait to get their hands in there. Find the recipe here!
Another one of my favorites would be these mini stuffed peppers. I made a double batch of this recipe from Cooking Creation. Mike couldn’t wait to eat the leftovers!
Next up: Tortellini and Mozzarella Skewers. These are really simple to make. Cook the tortellini according to package directions. Line up each skewer with a tortellini, half of a cherry tomato, and a fresh mozzarella pearl. Serve with pesto sauce for dipping.
