These Butternut Squash Noodle Foil packets make for an easy clean up! They make for a quick and flavorful dinner.
Start by preheating the oven to 375 degrees. Spiralize a three inch piece of butternut squash and trim the noodles. In a medium sized bowl, combine the noodles, broccoli, sage, garlic powder, sea salt, and black pepper. Use pasta tongs to evenly coat the noodles with the spices.
Lay out four pieces of foil about 16 inches long. Spray with cooking spray and evenly divide the noodles. Top with artichoke hearts and goat cheese.
Bring the ends of the foil together and fold. Then fold ends in to create a sealed packet (you want to keep the steam in the packet).
Put foil packets into the oven and bake for 20-25 minutes. Be sure to test a butternut squash noodle from the middle of the packet, and make sure that is soft.
Eat right out of the packet, or slide onto a plate. Top with fresh pomegranate seeds before serving.

- 2 oz goat cheese
- 1 cup pomegranate seeds
